Potatoes Salad Recipe

6-7 Potatoes (white or Yukon Gold)

3 Hard-boiled eggs

1¼ Cup Mayonnaise

½ Cup Dijon Mustard

Paprika

Onion powder

Optional: ¼ cup Sweet Relish

 

  1. Peel and dice your potatoes into smaller chunks
  2. Fill a pot with water until potato chunks are covered and boil until the chunks are softened, but not mushy; a fork should be able to comfortably spear them without completely mashing them. This process should take about 15-20 minutes.
  3. Dunk potatoes in a bath of cold water for 5 minutes to immediately stop cooking
  4. Boil your eggs until hard-boiled, for about 12 minutes. The yolk should be solid upon cracking. Dice the eggs into small pieces.
  5. In a large bowl, fold the mayo, dijon, and relish into the potatoes and eggs until chunks are evenly coated. Add in paprika and onion powder to taste and color. 

 

Keep this dish refrigerated and covered until serving time.
